Greek Spinach and Rice – Spanakorizo
For the high protein, high fibre, vegan and Greek dish, serving 1, follow the recipe and instructions below
Ingredients
- 450g fresh spinach rinsed
- Juice of half lemon
- 1 chopped onion or 2/3 chopped spring onions
- 2 1/2 tbsp. olive oil
- 1 teaspoon. dry mint
- 2 tbsp. chopped dill
- 2/3 cups of water
- 1/3 cup of either red lentil rice or chickpea rice
- salt and pepper
Optional: 1 tbsp. tomato paste
Instructions
- Heat pan with 1 teaspoon of olive oil.
- Add spinach and wilt with the lemon juice
- In another pot, saute the onion with the rest of the olive oil until soft
- Add the spinach, with some dry mint and dill and 2/3 cup of warm water and bring to boil
- Add red lentil rice or chickpea rice with salt and pepper (for seasoning) and simmer for about 20 minutes until rice is soft. Add more warm water if needed
Optional: Serve warm with a squeeze of lemon juice, olive oil or feta.
