Chickpea Buddha Bowl

Ingredients
- 250g cooked Chickpea Rice
- 130g cooked kale
- 200g cubed butternut squash, cooked
- 100g diced beetroot, cooked/prepared
- 1-2 broccoli spears, cooked
- Handful pumpkin seeds
Optional: Drizzle of olive oil
Instructions
- Place the kale in the bottom of the bowl, slightly leaning to one side to leave a gap next to it
- Place the Chickpea rice next to the kale, partially over the top of one side
- Place the butternut squash into the gap between the rice and kale
- Place beetroot between the rice and butternut squash
- Slide the broccoli spear(s) between the rice and butternut squash
- Sprinkle pumpkin seeds over the top
- Drizzle the olive oil on top, if using, and serve
